how are you celebrating our nation's independence?

i'm going whole hog.

that's right. an entire pig. slow roasted. all day on a spit. rubbed down and then mopped all day with a vinegary sauce.

we actually upped the poundage due to an influx of guests. i think it's gonna be 100lbs now. we have a smoker with an electric spit and everything!

we're gonna make a carolina style mop sauce to mop it with during cooking and then probably two different kinds of bbq sauce on the side.

happy independence day indeed!
